The date, the product and recipe, jar count and size, the method (water bath or pressure), process time and PSI, headspace, whether each jar sealed, and a best-by date. That is exactly the canning log above — and the seal check is the column most people wish they had kept.
The USDA’s guidance is to use home-canned food within about a year for best quality. It stays safe longer if the seal is intact and it is stored cool and dark, but color, texture and nutrition fade. That is what the best-by column — and the app’s reminders — are for.
